Licensee Lee Saunders knows exactly what it takes to make a pub successful and with over 15 years in the industry he has a wealth of experience to draw on.
Lee said: "My career in the trade started when I was just a teenager working part-time in my local. Since then I haven't looked back. I got my first head chef role at just 20 and have headed up teams across the UK and abroad.
"I recently decided that I wanted to run my own pub and that's when I took on the lease at the New Broom. This has been something of a dream fulfilled for me - it's great to finally be working for myself."
Lee and partner Hana Dejmalikova only took on the pub in February but have already made some huge changes. A joint investment with the brewery of over £40,000 has transformed the former Chinese restaurant into an inviting community pub with a contemporary English and Eastern European menu.
Lee said: "A lot of hard work went into the refurbishment and the day that we opened was one of the proudest of my life. Our customers absolutely loved the new look and the biggest reward for our efforts has been to see them coming back time and time again."
"But one thing I have learnt is that running your own business isn't just a job. It is a life changing decision. Personally I can't imagine doing anything else but there is a lot of work behind the scenes that people don't see and it is important that you are prepared for that."
Lee and Hana both agreed that training was a key factor in making a success of their own pub.
The Pub Company give all new licensees the chance to attend their Introduction to Marston's Pubs Workshop, a comprehensive 1 day workshop to help prepare you to take over your Pub and get off to a flying start.
Licensees get to speak with industry experts about how to maximise growth markets, avoid scams and manage staff relations while the Pub Company representatives are on hand to provide advice on a range of topics such as catering, entertainment and customer promotions.
Hana said: "It gave us a great insight into life as a licensee and we got to learn a lot about the pub company and the support that they provide."
